3rd November. still going! 5:2 diet recipe included

PomPom - our mac-and-cheese was okay, but not delicious. It's hard to find a "sharp" cheese to give a good taste to the sauce. In the UK I'd've gone for mature cheddar (which would have been in the fridge anyway), but because this was a bit of a spur-of-the-moment dish, I hadn't bought an approprite cheese to make a tasty sauce. The Cantal I had was a bit mild and "soapy".

Anyway, what's planned for this week? Let's have a look-see:
SUNDAY
(today)
Cathy is leaving for the UK tomorrow, so she is bringing down the leftovers from her freezer (she has shut her house down for the winter) for us to eat. Pizza, I believe. I will provide a roast camembert to start, and coleslaw and salad to go with the pizza. Biscuits and fruit for dessert.
I'm sure I'll find a bottle or two of white wine to have with that!

MONDAY
(fasting)
Tandoori turkey for supper (175 calories - or so) + naan bread and tzatziki 

TUESDAY
Chilli - got the minced beef in the freezer needing using up. We'll have this with rice.



WEDNESDAY
Beef fajitas - there are tortillas in the freezer and peppers in the fridge. I'm not sure if there is the meat in the freezer, but if not Mr FD can pop out to buy a piece during the morning. 

THURSDAY:
(Fasting)
White fish with chorizo & paprika. Served with some steamed potatoes, perhaps. 
I'm adapting this recipe from my 5:2 recipe book - it's actually for clams but I don't fancy that, so I'm using white fish (Recipe for 2 people):
200g white fish, cut into pieces
300g tomatoes
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, chopped
1/4 tsp paprike (smoked, if you have it)
200 ml fish stock
35g chorizo, diced
seasoning
chopped parsley

1. Skin the tomatoes in boiling water, then deseed & dice the flesh
2. Heat the oil, add the onion & fry gently for 5 minutes. Add the garlic & paprika & fry for another minute.
3. Stir in the tomatoes, stock & chorizo; season to taste & simmer for 3-4 minutes.
4. Add the fish, cover & simmer gently until cooked. Spoon into dishes and sprinkle with parsley. Serve.
 

FRIDAY
Quick pasta & veggie sauce...puttanesca perhaps?
SATURDAY
Sausages baked with apples, (recipe here) green veg and garlic bread


So there we are. I'm still aiming to empty the freezer, so that I can put some new stuff in - both Lidl and Aldi have some good bargains, which I can't take advantage of, due to the lack of space!! Sadly some things have lost their labels so it's a bit of a lottery what it is I'm defrosting - is it vegetable soup or is it stewed plums?! Will Mr FD get a lot of unexpected puddings - but no lunch?! 
It would help if I did an inventory of what's in there so I could plan more efficiently - but it's a cold job, which I don't want to do!

Elizabethd - thank you for the tip about plain boiled rice. I actually went for a piece of toast with some redcurrant jelly spread on it...it was delicious!

PomPom & Mags - don't get too excited. If I do manage to post every day in November it's not going to be earth shattering (or life changing!) stuff. More of the same old woffle, of that there is no doubt!

    We eat chili with rice, too. I'll make some for Bill as he recovers. He adores chili.

  3. Ha ha!!! I am having to empty the freezer at my old house and there is this tub with these strange yellowy clumps in!!! I have NO idea what they are and where they came from and so am not sure what to do. If they're ice-cream, then I should just try them but I can't help but think what if they are some sort of fat and they'll taste GRIM!!!! WHat lovely looking meals here!!x
