RECIPE: Pork, apple & herb loaf
This was really easy and very tasty. Even in my "sicky" state I found it appealing. It's great hot, and cold in sandwiches.
600g minced pork (low fat if possible)
2 apples, grated
1 red onion, chopped
1 tsp ground ginger & 1 of ground cumin
Mixed dried herbs
seasoning to taste
1 egg, beaten
Preheat oven to 190°C. Line a 2lb loaf tin with greaseproof paper (or similar)
Mix everything together well. Put in loaf tin.
Cook for about 50 mins - 1 hour.
Serve with a tomato sauce.
We had it with cabbage and roast, spiced butternut squash. Very nice. And I had it with pickle and french bread for lunch. Possibly even better cold!
